Red meat with pearly-white fat streaks. The meat of the 100% Iberian acorn-fed Paleta de Bellota has a delicate flavor, slightly salty and exquisite in the mouth, a pleasant and characteristic aroma, a unique aroma. Homogeneous texture, not very fibrous and without pastiness or softening.
